Kuma Ani is built based on the concept of our master chef, Tommy Huang, to serve authentic Japanese dishes infused with Western culinary techniques in a comfortable dining environment. Tommy uses not only typical ingredients like, tuna, salmon, yellowtail, seaweed to create dishes. But he uses exotic ingredients such as,saury (sanma), Spanish mackerel, king salmon, madai, rice paper, lobster, soy paper etc. in his unique creation. And we are proud to be the first restaurant to use press sushi technique in the Capital Region.
